Located in the Bensa woreda of Sidamo, the Ayla washing station is supplied by more than seven hundred smallholders from the Shentawane community. Cherries undergo a carefully managed one hundred-hour fermentation process, followed by slow drying on raised beds to enhance quality. We taste strawberry, black cherry, lavender florals, and delicate white tea in our roast of this vibrant lot.

Ethiopia’s Sidamo region is one of the most renowned coffee-producing areas in the world. Like the rest of the country, it is divided into several woredas (districts) and kebeles (communities), each home to washing stations that reflect the unique terroir of their surroundings. One such woreda is Bensa, where the Shentawane kebele is located.

Ayla is the central washing station in the Shentawane community. It’s owned by Testi Trading, a family-run operation that manages many premier washing stations throughout the region. In addition to maintaining high quality standards across their sites, Testi reinvests in local communities through its “Project Direct” program, which focuses on education and the construction of primary schools.
