Hacienda Carmona has been in Maria Zelaya’s family since 1910, when it​ ​was purchased by Maria’s grandfather, Luis Pedro Aguirre. Mr. Aguirre passed the farm on to Maria’s​ ​mother​,​ and now she is the third generation owner and manager of Carmona.​ Maria processes the coffees from Carmona at Pulcal, her washing station on-site. Maria also uses this moniker for the highest quality coffees harvested later in the season from the farm's top altitudes. Our 2017 Pulcal lot has a profound depth of sweetness that resonates with poached pear notes underpinned by a marzipan sweetness and browning sugar base.
