Hacienda Carmona has been in Maria Zelaya’s family since 1910, when it was purchased by Maria’s grandfather, Luis Pedro Aguirre. Mr. Aguirre passed the farm on to Maria’s mother, and now she is the third generation owner and manager of Carmona. Maria processes the coffees from Carmona at Pulcal, her washing station on-site. Maria also uses this moniker for the highest quality coffees harvested later in the season from the farm's top altitudes. Our 2017 Pulcal lot has a profound depth of sweetness that resonates with poached pear notes underpinned by a marzipan sweetness and browning sugar base.
