Origin Spotlight: Espírito Santo, Brazil
Our first ever single origin release from Brazil comes from the state of Espírito Santo—a coastal region with small farms and a flourishing community of specialty coffee growers.
Nestled between granite-rich mountains and pristine Atlantic beaches, Espírito Santo offers a diverse terroir that contributes to its coffee's unique profile. The high altitudes and cool evening temperatures create a slow maturation process, allowing the coffee fruit to develop sweet, complex flavors that are often missing in faster-growing regions.
Typically starting in June, the harvest period in Espírito Santo can extend well into December. Careful picking is required to avoid collecting underdeveloped coffee cherries throughout the season. Many farmers utilize machines that shake the coffee trees to release ripe cherries, then hand-sort the collection. On the smallest-scale farms nestled in the higher elevation points, farmers can only manage with hand-picking.
We predominantly see natural and pulped-natural coffees offered from Brazil—in Espírito Santo, the humid oceanic climate obligates producers to use washed processing methods to avoid defects and unpleasant flavors. This contributes greatly to the clean, articulated flavors we experience from this region.
Our selection from Espírito Santo for Wallabout brings nuance to our chocolate-forward blend with its consistently complex and balanced profile. Even more dynamic, dazzling flavors from the region can be tasted in our first ever single origin coffee from Brazil: Sítio Forno Grande. We are excited to showcase the potential of this region with this unique release.
